Garlic Pork Carnitas Slow Cook Sauce

with lime and chipotle

In Mexico, huge copper cauldrons simmer chunks of pork into savory, ultra-tender carnitas. At home, our garlicky sauce transforms pork shoulder. Serve it with guacamole or in tacos.

This seasoning packet is the best. We usually sear a piece of pork shoulder and then throw it in the slow cooker with this sauce. Then we make corn tortillas from scratch, soak two thinly sliced red onions in lime juice, mince up some cilantro, and cut up some fresh and very ripe mangoes, and serve. It is one of our family's favorite meals. Absolutely the best pulled pork tacos ever.

My husband needed to head out on a last-minute on a business trip, and I knew I'd be pinched for time after work and shuffling my teens to Sports. I had a 2 lb. tenderloin in the fridge and a pouch of garlicky carnitas. Tossed it all in a small roaster and left a note for my son to turn on the oven 3 hours before I was due to get home. My son (16 years old) started the oven and the meat cooked perfectly. It was so good, both kids asked for it again...and it's in the oven right now! I serve it with a Chipotle copycat of Cilantro Lime Rice, Chips and home made pico de gallo. Yum. Yum. Yum.

This was remarkably good, and the meat came out just perfect. The whole family loved it. Not too spicy, but full of good flavor.
