Chipotle Pumpkin Seasonal Salsa
with roasted tomatillo
I love salsa in every season. But especially in fall, because that’s when we make this unexpectedly delicious combination of velvety pumpkin and tangy roasted tomatillos with the sweet-smoky glow of chipotle chiles. Oh, and there’s a little roasted garlic, too, just for good measure. Scoop it up with our artisanal Frontera tortilla chips. Or spoon it on roast chicken or slow-cooked pork. You’ll be happy you did.

Don't let the pumpkin fool you. It's not a trick; it's a treat! It's not sweet like pie, rather savory like soup. I didn't know what to expect. I paired it with a Colby cheese omelet and avocado -- and it was DELICIOUS! I kept adding more salsa to my plate! AND, it's good for you! The pumpkin was not the least bit overwhelming. A great way to add a vegetable into your meal.

I was given this salsa as a gift. I couldn't wait to try it, because I remember Rick Bayless from Top Chef Masters. :D My mother and I got chips and dug in right away!! The flavor combination of tomato, pumpkin and chipotle was amazingly delicious. My mother said that it would taste good on a ravioli or something. Challenge was accepted. ;) I sauteed some vidalia onion and then poblano. I boiled some gnocchi and then tossed it all together in an oiled baking dish with the salsa. Topped it with shredded monterey and baked it until bubbly. FREAKING DELICIOUS!! I'm back to buy a couple jars before they are gone. rnrnThank you Chef Rick Bayless for a delicious dinner! :)

This salsa tastes watery if it has settled so be careful.rnrnProperly used it has a delightful smooth texture with bites of pumpkin deliciousness and just enough spice to be highly addictive. I thoroughly enjoyed it.
