Do we need an excuse to party? Not during March Madness—those weeks of rapid succession basketball tournaments featuring many major colleges and universities. We love to gather around the television and root for our favorite teams. And no, we don't have any money riding on the games.
A casual menu centered on a giant, open-face torta means the cook can watch the games, too. Get things started with a hot cheese and salsa dip—flavored with a little beer and fresh cilantro. Serve the dip with Frontera tortilla chips and cutup vegetables.
Tender, smoky glazed ribs make great nibbles when cut apart into individual ribs. Be sure to have plenty of small plates and napkins on hand.
Prepare the components of the chicken torta (the black bean spread, the pepper mixture and the cooked chicken) in advance. Then assemble the open-face torta up to 1 hour in advance of serving. Heat the oven and bake the torta until piping hot. Sprinkle with cilantro and slide onto a cutting board. Set out a very sharp slicing knife so guests can serve themselves a wedge of the warm torta.
College basketball plus homemade food. Now that's "good, clean fun" as Mother used to say.
