In our world, every holiday deserves great food. The trick is to keep the fuss to a minimum. This Fourth of July finds us craving simple beachside fare. And an old-fashioned shrimp boil fits the bill.


We’ll add a Mexican touch by flavoring the cooking liquid with guajillo chiles, tangy tomatillos and roasted garlic and a sprinkle of fresh cilantro. Sweet corn and new potatoes simmer gently in the liquid picking up loads of flavor. A super-easy dipping sauce (made from mayo and hot sauce) serves as a dunk for the tender shrimp.


To accompany the one-pot meal, set out a platter of heirloom tomatoes dressed with a creamy avocado dressing. We can’t resist fresh corn bread—especially when it’s slathered with chipotle honey butter.


For dessert, coarsely chopped Mexican chocolate transforms brownies into a decadent treat. Serve them sprinkled with powdered sugar or cinnamon frosting. Independence Day never tasted so good.
