Cinco de Mayo Tostadas for Six | Print |

We’ve been celebrating Cinco de Mayo, the Fifth of May, nearly every year for as long as we can remember. It’s not that we have any long-lost relatives in the battle that marked Mexico’s victory over the French army in Puebla in 1862. Rather, we love to cook. Fortunately we have a bevy of friends and relatives that enjoy Mexican food.

The early arrival of spring in much of the United States makes us long for the casual, satisfying food of summer and Mexican beach resorts. So this year our menu features crispy, refreshing tostadas. We’re topping them with red chile-sauced chicken, a spoonful of plain yogurt and a shower of fresh onion and cilantro. Vegetables in two forms—a simple soup with golden noodles and a stunning salad with creamy chipotle dressing—complement the tostadas.

Of course, we’re offering plenty of guacamole and chips to start the evening. For dessert, a refreshing strawberry guava ice will make us think of the paletas carts on the street corners in Mexico. Send guests home satisfied with the lingering taste of café de olla and they’ll be back for more!
