In between all the holiday roasts, cookies and cocktail parties, we crave simple food packed with flavor. So we look to satisfy with hot sauce, chiles, fresh herbs, roasted vegetables.
A pot of roasted tomato and beer steamed mussels makes a great go-to menu for sharing with a few friends. Fresh mussels offer lean protein and speedy cooking. We order them a day or two in advance from the local fish market. Their steaming liquid can be made in advance which means dinner can be on the table in minutes.
Frites, aka French fries, are a classic accompaniment to steamed mussels. We’re making ours in the oven cut from assorted root vegetables. Carrots, parsnips and turnips actually get sweeter while they bake. You can make them in advance and them pop them under a hot broiler to recrisp before serving with a spicy mayo dip seasoned with red chile hot sauce.
A beautiful salad proves welcome during the excesses of holiday treats. We’re peppering ours with fresh pomegranate seeds and crunchy pumpkinseeds for a festive bowl.
Cold, crisp beer, enlivened with freshly squeezed grapefruit juice makes a stunning libation anytime of the year. ‘Tis the season to tint the whole thing ruby red with a splash of pomegranate juice.
