We love leftoversRefrigerate all leftovers within 2 hours of cooking if you plan to serve them. Leftovers will keep about 2 or 3 days. Freeze anything you can’t consume in that timeframe for up to a month or so.

Stock the pantryHave a stocked cupboard for unexpected house guests. We like to have hearty tortilla chips, pasta, bottled salsa, canned beans on hand for a quick batch of chilaquiles, chili or mac and cheese. A supply of cheese, eggs, sour cream and cilantro in the fridge gives you many brunch options.
Fresh green salads with simple homemade dressing and cut veggies will refresh even the biggest overeater.
