Finca Las Nieves was an experience straight out of Indiana Jones...at least the trip to get there was. The trek to get to the coffee plantation made you feel that you were about to embark on a journey to witness something truly spectacular...and by the time you reach the summit where the plantation sits, you were not left disappointed.

 

Not simply a producer of world-class coffee, Robin, the owner of the plantation, and Gustavo, an agricultural specialist, cupper, and coffee expert, helped restore the plantation to its former glory and have even gone as far to make the destination a place for eco-tourism where travelers can come and bird watch, learn of the plantation, eat from the vegetable garden, and learn of their environmentally conscious recycling program. To be nestled high in the mountains with such beautiful surroundings, fresh produce, mountain water, and world-class coffee, hard to say we missed anyone that day....pretty perfect setting

Destination - Roca Blanca. A quiet beach community located just outside downtown Puerto Escondido. It's here that Rick tried his hand at some spear fishing! Not everyday you get to go out with a seasoned spear fisherman in "Pepe," our instructor, and try and catch your dinner with a spear gun....

And then go back to a villa and cook a 5 star, 3 course dinner for 6 people in a kitchen fit for 1 cook packed full of a crew of 8 people ....

In the end, what we ended up with was a gorgeous day on the beach and left with bellies full of a delicious fish prepared three ways.

 
Fresco at NU: Something Special

Frontera Fresco at Northwestern University’s Norris Hall is raising the bar on student center dining. Flavorful tacos, tortas and huarraches along with fresh salads, savory soups and great breakfast options have NU students eating right. On special at Fresco now are Corn & Zucchini Tacos and Bacon & Queso Molletes, with more great-tasting bites coming soon!
