Our second day in the Cabo area was incredible: Rick reached out to local chefs, farmers, and sommeliers and invited them to a stunning beach house on the coast.  Local chef Margarita Carrillo and Rick joined forces and put together a meal with local ingredients from Los Tamarindos organic farm. Margarita is a talented, passionate chef who has fought for the global recognition of Mexican cuisine, including a Unesco proposal to designate Mexican Cuisine as an Oral and Intangible Patrimony of the World. Before her, no cuisine had ever been recognized!

 

Rick's Top Chef skills came in very handy when he invented a dish on the spot after finding some local cabrilla (similar to sea bass) fish literally caught hours before. In honor of Enrique SIlva's's organic farm, he based the sauce around tamarind, combining it with chiles, garlic, and piloncillo sugar.  Believe me, it was incredible.

 

The mood all day was tense as we fought the daylight to get all the scenes done, but even after 14 hours of shooting we were all elated. Shooting this season documentary-style allowed the dinner conversation to be frank, passionate, and profound.  Hit play to hear some snippets from Rick and to check out the stunning beach house we filmed in!
