Makes 6 appetizer servings

  • 12 1/2-inch slices of baguette
  • Extra Virgin Olive Oil for Brushing
  • 6 ounces fresh goat cheese or 2 3-oz. packages of cream cheese, at room temperature
  • 1 cup Frontera Salsa-, such as Roasted Poblano, warmed
  • GARNISHES: chopped fresh cilantro, grated Parmesan cheese

 

1. Brush baguette slices generously on both sides with olive oil. Grill on a grill pan or in skillet over medium heat, pressing lightly. Turn and toast the other side.

2. In a bowl, mix goat cheese or cream cheese with 1/2 cup warm salsa. While the bread is still warm, top with the cheese mixture, then a spoonful of remaining warm salsa. Sprinkle with cilantro and grated Parmesan cheese. Serve warm.
