Serves 6
- 2 slices bacon, chopped
- 1 small red or green bell pepper, seeded, chopped
- 1 small onion, chopped
- 1 can (6 ounces) tomato paste
- 3 tablespoons Frontera Chipotle Hot Sauce to taste
- 3 tablespoons brown sugar or honey
- 1 1/2 tablespoons Worcestershire sauce
- 2 cans (15 ounces each) pinto beans, drained
- Heat oven to 350 degrees. Cook bacon, bell pepper and onion in medium-size ovenproof saucepan until onion is crisp-tender, 3 to 5 minutes. Stir in tomato paste, 1½ cups water, hot sauce, brown sugar and Worcestershire sauce until sugar is dissolved. Stir in drained beans.
- Bake, uncovered, until glazed and browned on top, 45 minutes to 1 hour.
