Grilled Pork with Pickled Red Onions | Print |

Serves 4

  • 4 thin pork cutlets, pounded to ¼ inch
  • ½ cup fresh lime juice
  • 1 medium red onion, thinly sliced
  • 1 jar (16 ounces) Frontera Mango-Key Lime Salsa

Marinate pork or chicken in ¼ cup lime juice mixed with ½ teaspoon salt for 1 hour. Marinate onion in remaining ¼ cup lime juice and ½ teaspoon salt in a small bowl. Grill pork just until juices run clear. Serve with salsa and pickled red onions.

Hey Rick,
Huge fan of the show, recipes and even the restaurant. However, seeing a Frontera salsa as the main ingredient in a lot of these recipes is getting annoying. Don't be greedy.
