Marinate pork or chicken in ¼ cup lime juice mixed with ½ teaspoon salt for 1 hour. Marinate onion in remaining ¼ cup lime juice and ½ teaspoon salt in a small bowl. Grill pork just until juices run clear. Serve with salsa and pickled red onions.
