Pumpkinseeds, also known as pepitas, are seeds from a great variety of green/tan pumpkins or other large squash. They have been eaten by Mexicans since the dawn of history.
In Mexico, the seeds can be purchased shell-on, hulled, raw, toasted or ground and each variety has its particularities of taste and texture. For most recipes, I use the hulled, untoasted, pointed, flat green pumpkinseeds found in most large supermarkets. Stored in the freezer, well-wrapped, they will keep 6 months or more. They are commonly toasted before they are ground into a sauce or eaten out of hand.
