Potatoes are comfort food the world around. I love to add them to taco fillings and egg dishes, or to the pan while roasting a chicken. Mashed and mixed with fresh corn masa they make a great dough for crispy sopes.
For an easy, protein rich potato salad, boil the smallest yellow organic potatoes and shelled edamame separately in salted water to cover until tender. Drain; cool. Cut the potatoes in half and toss with the edamame, chopped fresh chives, salt and black pepper. Dress with sour cream and whole grain mustard or an herby vinaigrette.
