Kiwi Fruit | Print |

Beautiful, brilliant green and aromatic-tangy, kiwi fruit is perfect paired with summer berries for a fruit “salsa” to pile over crisp meringues or tender angel food cake. Kiwi’s flavor reminds me a bit of strawberries and pineapple, even perhaps a hint of sweet cucumber.

Let firm kiwi fruit sit on the kitchen counter a few days to ripen until it is just soft enough to yield to gentle pressure. Ripe kiwi will keep in the refrigerator for a couple of weeks. For an easy snack chockfull of vitamin C, cut the fruit crosswise in half and eat it right out of the shell with a grapefruit spoon. For a fruit salsa, or pretty slices, peel the kiwi with a sharp paring knife, then slice it crosswise.
