Makes 6 servings
- 1 ripe large Avocado from Mexico, halved, pitted
- ¼ cup superfine sugar
- 3/4 cup fresh lime juice
- About 12 fresh mint leaves
- Big pinch salt
- 9 ounces silver tequila
- Ice cubes
- 1 1/2 cups club soda
- Mint sprigs for garnish
- Spoon the avocado pulp into a blender. Add sugar, lime juice, salt and ½ cup water. Process until smooth. Add mint leaves and process with on/off turns to finely chop the mint.
- Pour ¼ cup of the avocado mixture into the bottom of six 10-ounce tumblers. Add 1 ½ ounces (3 tablespoons) of the tequila to each glass and stir well. Fill the glass with ice cubes and then top off each drink with ¼ cup of the club soda. Garnish with mint sprigs and serve immediately.
