Makes 10-12 servings

 

  • 1- 14 ounce can of coconut milk
  • Grated zest of 1 lime
  • Juice of 2 limes
  • ¼ cup confectioners’ sugar
  • ¼ cup shredded coconut
  1. Puree coconut milk with zest, lime juice, confectioners' sugar and shredded coconut.
  2. Pour into small popsicle molds or 3-ounce paper cups; insert wooden popsicle sticks. Freeze several hours, or until firm.
